Low Fat Leche Flan

from Mula sa Puso: Heart Healthy Traditional Filipino Recipes by American Heart Association, Western States Affiliate, San Francisco Division

1/3 cup   Sugar for caramel
2 cups   Egg substitute
1 cup    2% low fat milk
1/2 cup   Sugar
1 tsp    Vanilla
1 sprig   Mint leaves, finely chopped (optional)

Caramelize sugar in a non stick pan.  Pour into small baking pan.  Cool and set aside.  In a double boiler, cook the egg substitute, low fat milk and sugar.  Add vanilla and finely chopped mint leaves.  Stir constantly until it thickens a bit.  This process takes about 5 to 10 minutes on low to medium heat.  Preheat oven to 350 degrees.  Pour liquid ingredients in the baking pan.  Cover with foil.  Cook in Mary’s bath for 20 to 25 minutes, until it solidifies.

Healthier Halo-Halo

Halo-Halo (“halo” means mix in Tagalog) is a sweet, creamy, and filling Filipino dessert or snack.  It’s a mixture of sweet beans and tropical fruits filled with crushed ice and milk.   This favorite Filipino concoction is popular during the hot summer months and is usually served in a tall, clear glass.

The traditional recipe of Halo-Halo recipe uses sweetened ingredients in syrup, ice cream, leche flan and evaporated milk that are very high in sugar and fat.  With our healthier Halo-Halo, we choose to use fresh fruits and low-fat alternatives.  If you buy your fruits and beans in cans or bottles, make sure to drain and rinse the syrup.  Try it with fresh apples, papaya, peaches, pears, and mangoes!

2 tablespoons of langka (jackfruit)
2 tablespoons of unsweetened corn kernels
2 tablespoons of sugarless agar agar or jello
2 tablespoons of macapuno (shredded coconut meat)
2 tablespoons of unsweetened red beans
2 tablespoons of unsweetened white beans
2 tablespoons of plantains or fresh bananas
1 tablespoon of ube (purple yam)
Crushed ice to fill glass
2/3 of a cup of low-fat skim milk
A scoop of low-fat frozen yogurt (vanilla or mango)
A fresh cherry on top!

February 2012 Illinois Senior Medicare Patrol Program

Medicare will only cover home health services (a nurse or therapist who comes to your home) if you are “homebound.” If you are “homebound,” you cannot leave your home on your own without some kind of assistance. Home health services include physical therapy, speech therapy, and skilled nursing services. Basic care services like bathing, help with getting dressed, cooking, cleaning, etc. are NOT skilled nursing services. If someone offers you “free” basic care services in your home, this is fraud – just say no! If you need home health services, contact your doctor. Your doctor must write a prescription for home health services before you receive them. Never accept home health services from anyone who comes to your door or calls you on the telephone, even if they tell you that your doctor sent them!

Aakuin lang ng Medicare ang mga serbisyong pangkalusugan sa tahanan (isang nars o terapist na pupunta sa iyong tahanan) kung ikaw ay “homebound”. Kung ikaw ay “homebound,” hindi ka maka-alis ng bahay ng mag-isa na walang tulong ng ibang tao. Kasama sa serbisyong pangkalusugan sa tahanan ang pisikal na terapi, terapi sa pananalita, at serbisyo ng dalubhasang nars. Ang mga pangunahing serbisyo ng pangangalaga gaya ng pagpapaligo, pagtulong sa pagdadamit, pagluluto, paglilinis, atbp. ay HINDI serbisyo ng dalubhasang nars. Kung mayroong maghahandog sa'yo ng “libreng” pangunahing pangangalaga sa iyong tahanan, ito ay isang panlilinlang – tumanggi ka na lang! Kung nangangailangan ka ng serbisyong pangkalusugan sa tahanan , tawagan ang iyong duktor. Kailangan ng iyong duktor na sumulat ng riseta para sa serbisyong pangkalusugan sa tahanan bago ka tumanggap nito. Huwag kang tatanggap ng serbisyong pangkalusugan sa tahanan mula sa sinumang bibisita sa iyo o tatawag sa telepono, kahit na sabihin pa nila na sila ay pinadala ng iyong duktor!
